In the Sakai district sits a small ramen shop, Mendokoro Nene. Its signature is mapo ramen: noodles cloaked in a thick, glossy sauce of chilli, sansho pepper and minced pork. Each mouthful chases the last — first the bright tingle of sansho, then the deep savour of the broth surfacing behind it. A tangle of slivered leek crowns the bowl, and the heat rises slowly to meet you through the steam. The good eating of this village waits in quiet corners like this one.
